160 grams beef mince
40 grams cottage cheese
1 teaspoon tamari sauce
1 teaspoon coriander
1 teaspoon garlic
Pinch of paprika
Salt and pepper to taste
2 tablespoons sour cream
2 zucchinis – cut in half and hollowed out
(Do not throw the inside of zucchini out)
½ onion diced
1 spring onion finely chopped
8 cherry tomato’s thinly sliced
Heat a nonstick pan, then dry fry the mince until half-browned.
Add onion and the flesh from the zucchini and cook for 2 minutes.
Then, add garlic, coriander, tamari, paprika, salt and pepper and let it simmer for 2 minutes.
While the mince is cooking, grill zucchini flesh side down until golden.
Once the zucchini is grilled, place tomato slice’s inside the boat ready for mince. When ready place mince mixture in boats evenly.
Sprinkle cottage cheese over the tops of boats and bake in oven for 15 minutes at 180 degrees celsius or longer if you want cheese to go brown.
For plating, place sour cream evenly over boats and spread spring onions on top to finish.
Serves 2
500g lean beef strips
3 cloves garlic – minced
1/4 cup gluten free soy
1/2 cup natvia or stevia granules
1/2 tsp ginger
1/2 tsp chilli flakes
Heat a pan and brown meat and garlic. Drain off any excess liquid.
In a small bowl, combine soy, natvia, ginger and chilli.
Pour mixture into the pan and bring to the simmer.
Simmer meat for 10 mins or until sauce thickens.
Makes 5 servings
100 grams cooked chicken breast
Gluten free Tamari sauce
2 x zucchini noddles spiraled
Handful of leek
1 x bunch of coriander
1 x cup of baby spinach
Hot water
Salt and pepper to taste
Crush 1 clove of garlic and ginger into a bowl
Add splash of gluten free Tamari sauce
Add 100 grams of cooked chicken
Add zucchini noodles (made with a spiralizer)
Add handful of leek
Add coriander to your desire
Add baby spinach
Boil the kettle and pour over the top
Serves 1

Canned organic tomatoes
100ml water
1 tblspn stevia
Fresh coriander
Slender noodles
Cook onion for 5 minutes.
Add spices.
Stir together.
Add chicken.
Cook for 3 minutes.
Add tomatoes and water.
Bring to boil.
Simmer for 10 minutes.
Add stevia and fresh coriander.
Serve.
