200 grams chicken breast fillets
1 whole cucumber cut julienne style
2 tablespoons apple cider vinegar
2 tablespoons lemon juice
2 tablespoons vegetable broth (optional)
1 tablespoon chopped green onion
1 clove of garlic crushed and minced
1 basil leaf rolled and sliced
1 teaspoon cilantro/coriander leaves chopped
1/8 teaspoon red chili flakes
Salt and pepper to taste
Stevia to taste
Chop up chicken breast fillets.
Cook separately by baking in oven for 30 mins.
When cooked, set aside.
Chop up cucumber in julienne strips.
Mix liquid ingredients with the garlic, onion, fresh herbs and chili flakes.
Add chicken.
Mix in cucumbers and coat thoroughly with spice mixture.
Allow to marinate for 10 minutes or overnight.
Makes 1-2 servings ( add 1 vegetable).
Simmer tomatoes, onion, minced garlic, stevia and herbs (rosemary and chives) for 10-15 min until tomato is tender and sauce thickened.
Add 1 cup chicken stock
Simmer for 5 minutes then add 200grams chicken breast pieces
Simmer until chicken is cooked through and sauce thickened.
Before serving add 2 cups baby spinach leaves and stir through.
Serves 2
1 egg
50 grams beef mince
2 tablespoons grated zucchini
1 tablespoon finely diced onion
Pinch salt
Pinch pepper
Pinch chicken stock
Pinch paprika
Pinch chilli
Pinch ginger
Pinch marjoram
1/4 teaspoon garlic
1 teaspoon tomato paste
Boil the egg for EXACTLY 5 minutes, then run the egg under cold water or them put into an ice bath to stop them from cooking.
Once the egg has cooled down, peel and then put it aside.
Place all of the ingredients into a boil (except for the egg) and mix together.
Take half of the mince mixture and place it in the palm of your hand and place the egg on top. Then use the rest of the mince mixture to cover the egg.
Place ball in a small oven safe dish or cupcake tin to help keep the shape.
Bake in oven for 15-20 minutes.
Serves 1
100 grams beef (Scotch fillet was used for this meal)
2 tablespoons tamari soy
1 tablespoon grated fresh ginger
1 clove garlic crushed
1 tablespoon olive oil (for a phase 3 variation)
Chop beef into large cubes and poke onto skewers
Mix remaining ingredients into small bowl and rub all over beef both sides.
Leave for 15 mins minimum to marinate.
Bake at 180 degrees for 15 minutes
Serve hot with salad
